Uncle Sunny is a casual, family-run Vietnamese restaurant at 3241 Saskatchewan Drive in Regina. Slow-simmered pho, Vietnamese subs on house-made baguettes, steamed bao buns, fresh rolls and noodle bowls, made with care and served in generous portions.
Uncle Sunny opened in August 2021 at 3241 Saskatchewan Drive. In November 2021, Chi Dang and her husband, V Pham, moved to Regina from Dong Nai province in southern Vietnam with their two young daughters. Chi began working at Uncle Sunny, and the couple took over operations in June 2022.
Chi studied culinary arts in Vietnam, worked in a restaurant there and learned French-baguette baking from a well-known baker in her hometown. Today she and V Pham make baguettes fresh daily and simmer beef bones and brisket for approximately 24 hours for the pho broth. Favourites include The Classic Sub, Dry Traditional Beef Pho, Marinated Pork Roll, Lemongrass Chicken, the Trio Bowl and Fried Vietnamese Noodle with Chicken.
